What Is Ripe Pu-erh (Shou Pu-erh)?
Ripe Pu-erh, or Shou Pu-erh, is created through a controlled fermentation process (known as wo dui). Unlike raw Pu-erh, which ages naturally over decades, ripe Pu-erh develops smooth, earthy flavors more quickly, while maintaining the depth and complexity of Yunnan ancient tea leaves.
Fermentation Process
The leaves undergo a microbial transformation under carefully monitored humidity and temperature. This process:
- Darkens the leaves and liquor
- Reduces astringency and bitterness
- Enhances smoothness and body
- Develops earthy, chocolate, and woody notes
- Preserves digestive-friendly probiotics
Flavor Profile
- Earthy richness
- Dark chocolate undertones
- Woody and mineral notes
- Silky, mellow mouthfeel
- Subtle lingering sweetness
Brewing Ripe Pu-erh
Use near-boiling water (95–100°C / 203–212°F). Rinse briefly to “wake” the leaves, then steep 2–3 minutes. Multiple short infusions bring out layers of mellow complexity.
Ripe vs Raw Pu-erh
Raw Pu-erh (Sheng) evolves naturally over years, with vibrant, grassy, and floral notes that mature with time. Ripe Pu-erh (Shou) accelerates this aging via fermentation, creating ready-to-drink teas with earthy depth, smoothness, and probiotic benefits.
